Melon, mint and ginger fruit salad with optional added raspberries. A delicious way to serve fruit for dessert
When I think of fruit salad I think of a 1980s-style mix of mandarins, grapes and soggy apples in a overly sweet orange juice dressing. This melon dish on the other hand is light, refreshing, sweet and with just the right amount of kick from the fresh ginger. Ginger has about a billion health benefits too!
Since I’m usually a complete chocoholic when it comes to being inventive with dessert, this fruits salad makes for a really light, refreshing and tasty change. This would be perfect served up at a summer BBQ. It’s really simple to do to, and also gave me the perfect excuse to buy yet another tool for my kitchen – a melon baller.

- 2 ripe melons (Cantaloupe and Galia contrast and look fab)
- 250mls warm water
- 1 Tablespoon Raw honey, maple syrup or brown sugar
- 1 inch fresh ginger root, grated
- 100g fresh raspberries (optional)
- Handful of fresh mint
- With a melon baller (or tea spoon), scoop out balls of the melon flesh and place in a large bowl.
- Meanwhile, warm 250mls of water in a saucepan along with the honey and heat until the mixture thickens into a light syrup.
- Grate an inch of fresh ginger and mix in with the syrup.
- Pour the ginger syrup over the melon, scatter over the raspberries and stir in a large handful of chopped mint.
- Spoon into dishes to serve.
