Melon, Mint and Ginger Fruit Salad

Melon, mint and ginger fruit salad with optional added raspberries. A delicious way to serve fruit for dessert
Ingredients
  • 2 ripe melons (Cantaloupe and Galia contrast and look fab)
  • 250mls warm water
  • 1 Tablespoon Raw honey, maple syrup or brown sugar
  • 1 inch fresh ginger root, grated
  • 100g fresh raspberries (optional)
  • Handful of fresh mint
Instructions
  1. With a melon baller (or tea spoon), scoop out balls of the melon flesh and place in a large bowl.
  2. Meanwhile, warm 250mls of water in a saucepan along with the honey and heat until the mixture thickens into a light syrup.
  3. Grate an inch of fresh ginger and mix in with the syrup.
  4. Pour the ginger syrup over the melon, scatter over the raspberries and stir in a large handful of chopped mint.
  5. Spoon into dishes to serve.
