Melon, Mint and Ginger Fruit Salad

- 2 ripe melons (Cantaloupe and Galia contrast and look fab)
- 250mls warm water
- 1 Tablespoon Raw honey, maple syrup or brown sugar
- 1 inch fresh ginger root, grated
- 100g fresh raspberries (optional)
- Handful of fresh mint
- With a melon baller (or tea spoon), scoop out balls of the melon flesh and place in a large bowl.
- Meanwhile, warm 250mls of water in a saucepan along with the honey and heat until the mixture thickens into a light syrup.
- Grate an inch of fresh ginger and mix in with the syrup.
- Pour the ginger syrup over the melon, scatter over the raspberries and stir in a large handful of chopped mint.
- Spoon into dishes to serve.
