This nectarine bruschetta is inspired by the Italian classic dish. Smear ricotta on wholegrain flatbreads, top with nectarine and tomato and add Parma ham.
Ingredients
  • 16 cherry tomatoes on the vine, diced
  • 1 nectarine, diced
  • 1 clove garlic, minced into a paste with a pinch of salt
  • 1 tablespoon of olive oil
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon dried oregano (fresh even better)
  • a few leaves of basil, shredded
  • 250g ricotta
  • 4 wholegrain flatbreads
  • 4-8 slices of Parma ham
  • Handful fresh rocket
  • Optional; basil infused oil or olive oil to serve
  • Salt and pepper
Instructions
  1. First make up your bruschetta topping, mix together the diced tomatoes with the nectarine and stir through the garlic, oil, balsamic, oregano and basil, and season to taste with salt and pepper.
  2. Spoon the ricotta into a bowl, add a pinch of salt and pepper and then whip with a whisk or fork till its smooth and creamy and a bit lighter.
  3. Warm your flatbreads, or if making your own cook now.
  4. When the flatbreads are ready, divide the ricotta between the 4 breads, spreading over all the surfaces, top with the nectarine and tomato mix, drape over the slices or Parma ham and finish with a handful of fresh rocket. For extra lusciousness drizzle over some basil infused olive oil! Best served warm
