  • 1 pound Brussels sprouts, ends cut off and halved
  • 1 tablespoon melted duck fat
  • 2 tablespoons fish sauce
  • 2 teaspoons coconunt sugar
  • 1 teaspoon peeled and grated ginger
  • 1 Fresno or jalapeƱo pepper, minced
  • 1 tablespoon lime juice
  1. Preheat the oven to 425F. Place one oven rack in the center and another at the higest position.
  2. In a large bowl, toss together the Brussels sprouts and duck fat to coat well. Transfer to a rimmed baking sheet and roast for 25 minutes
  3. In the same bowl used for the Brussels sprouts, mix together the fish sauce, coconut sugar, ginger and Fresno pepper.
  4. After roasting for 25 minutes, add the Brussels sprouts to the bowl with the fish sauce mixture and toss to coat. Return to the baking sheet and turn the broiler to high.
  5. Return to the oven and broil the Brussels sprouts for 3 to 4 minutes, and then toss them with the lime juice. Serve hot.
