Blackberry & Fig Jam

A naturally sweet and very quick jam to serve on top of classic American waffles or pancakes for an indulgent breakfast or brunch
  • 1 cup of blackberries (approx 150g / 1 small punnet)
  • 2 black mission figs, diced
  • ¼ cup / 65mls water
  • ½ tsp vanilla extract
  1. Place the blackberries and figs in a small saucepan with the water and vanilla extract. Bring to the boil, then simmer for 12 minutes, till the water evaporates, the fruit breaks down and the jam thickens.
  2. Break down the fruit with the back of your spoon during the cooking process. I deliberatly left mine quite chunky so I could get the blackberry feeling.
